"I'm no longer addicted to sugar and ultra processed food": Ellen

Ellen was a food addict from the age of about 7, she says, with a history of obesity. Doctors and dietitians had put her on many diets as she was growing up, to the point of her doctor suggesting bariatric surgery.
She spent a lot of time alone in her bedroom eating ultra processed foods like crisps and chocolate, with the radio on so that nobody would know. And thinking about how to end it all because she was just so miserable.
Then when Ellen was 26, she read Dr. Atkins' book, and so started her low carb/keto journey. She I lost 11 stone (154lbs) in 2 years, and has maintained that weight loss for about 13 years.
She stopped eating anything with sugar and flour in it, and refined carbohydrates as well. Her foods included meat, fish, cheese, vegetables, and at the time fruit as well.
Ellen explains how moderation doesn't compute for her. Even now, after all these years, she still can't moderate certain foods.
Over time, Ellen realized that every time she reintroduces carbohydrates, the weight starts to creep back on. So it's easier if she just doesn't eat them. And she says she doesn't miss them. She feels quite satiated with her proteins, fats, and vegetables.
